Healthy Recipes: Tahini dressing for salads + bonus salad recipe

Hey #quarantinechef, how’s it going? A lot of us are all pumped up, motivated to eat healthy. And by the virtue of not having any househelp, we have to take care of all the cooking ourselves. So what do we do? We find recipes that are healthy, require easily available ingredients, and are quick. Nobody got time to spend hours in the kitchen, right? So here’s a recipe that meets all the criteria. Here goes-

Ingredients 

  • 1/3 cup tahini (sesame seed paste — raw or roasted)
  • 1 heaping tbsp freshly peeled grated ginger (or very finely minced)
  • 2 cloves finely minced garlic 
  • 1/2 tsp soy
  • 1 Tbsp rice vinegar* (or any vinegar you have)
  • 1 tsp toasted or untoasted sesame oil (or water)
  • 2 tsp maple syrup/ 1 tsp honey 
  • 2-3 tbsp water (plus more to taste)
  • 1 pinch sea salt (optional)

Method

The way to make this dressing is as easy as it gets. Toss everything in a blender, and blend to a fine paste. Voila, it’s done! 

Suggested salad to go with it 

  • 1 cup grated / ribboned carrot
  • 1/4 cup thinly sliced green onion
  • 1/2 cup thinly sliced red cabbage
  • 1/2 cup roasted salted cashews (or peanuts), roughly chopped

Toss in all together, dress it with the tahini dressing and enjoy!
