How to make your birthday special during the lockdown

Having your birthday during the lockdown is no fun. After all, birthday celebrations mean having your friends and family around, cutting a cake, a party, and having loads of fun. With the lockdown and social distancing, birthdays have lost that flavour. But don’t lose heart, the only way to be happy is to take things in your stride. You can have a good birthday, even during the lockdown. People have been coming up with unique ways to celebrate their birthdays – drive-by parties, WhatsApp games, Zoom parties etc to celebrate your day in style. Maadhuri R Sharma, a nutritionist shares a few lip-smacking food recipes which will make you drool.

Tzatziki recipe:

Tzatziki can be served as a starter. To prepare this dish, you need half of a large unpeeled cucumber and one and a half cup plain yogurt. Ensure that the water is drained out from the yoghurt.
Take two large finely minced garlic cloves, two tablespoons of extra virgin olive oil and a tablespoon of white vinegar. Add half a teaspoon of salt and one tablespoon minced fresh dill. Grate the cucumber, drain the mixture through a fine-mesh sieve and keep it refrigerated overnight. Combine the yogurt, garlic, oil, vinegar, and salt in a large bowl. Cover and refrigerate it overnight. Transfer the grated cucumber and fresh dill to the yoghurt mixture and stir to combine. Serve it chilled with pita bread for dipping or with kale chips.

Burrito Bowls recipe:

Take a cup of uncooked rice, a cup of home-made or ready to eat salsa. Add one and a half cup of chopped Romaine lettuce, half a cup of Monterey Jack cheese, 250 grams of black beans/ rajma soaked overnight, boiled with two garlic cloves, an onion and two tablespoons of taco seasoning.
Take half an avacado, seeded, peeled and diced and make it into Guacamole. Take a cup of thick yoghurt with lime, garlic and salt or 100 grams of fresh cream with lime,garlic and salt. Cook the beans in a pressure cooker by adding  garlic, onion and a dash of salt. Mash it slightly and add the taco seasoning and two tablespoons of salsa to it.
Cook the rice separately and then layer the rice in a bowl. Add the refried beans, then the salsa, the Guacamole, sour cream, lettuce and some cheese. Enjoy the delicious buritto!!!

Chocolate souffle:

Take a teaspoon of melted butter. Two tablespoons of sugar, two ounces of dark chocolate broken into pieces. Add a tablespoon butter, a tablespoon of flour and four and a one-third tablespoon cold milk, a pinch of salt, a pinch of Cayenne pepper, a large egg yolk
and two large egg whites. A pinch cream of tartar and a tablespoon of white sugar. Add all the ingredients and stir well.

Preheat the oven to 375 degrees Fahrenheit (190 degrees C). Line a rimmed baking sheet with a parchment paper. Brush bottom and sides of two ramekins lightly  with a teaspoon melted butter; cover bottom and sides right up to the rim. Add a tablespoon of sugar to the ramekins. Rotate the ramekins until sugar coats all the surfaces. Pour off the extra sugar.
Place chocolate pieces in a metal mixing bowl. Place the bowl over a pan of about three cups of hot water over low heat. Do not let water boil or come to a simmer. Melt a tablespoon of butter in a skillet over medium heat and  sprinkle it in the flour. Whisk for a minute until the mixture thickens. Whisk in cold milk for about two to three minutes until mixture becomes smooth and thickens. Transfer the mixture in a bowl with melted chocolate. Add salt and a small pinch of Cayenne pepper. Mix it together thoroughly. Add an egg yolk and mix it to combine. Leave the bowl above the hot (not simmering) water,  to keep chocolate warm while you whip the egg whites. Later, place two egg whites in a mixing bowl and add cream of tartar. Whisk until mixture begins to thicken and a drizzle from the whisk stays on the surface for about a second before disappearing into the mix. Add one third table spoon of sugar and whisk in. Whisk in a bit more sugar about 15 seconds; whisk in the rest of the sugar. Continue whisking for three to five minutes until mixture is about as thick as shaving cream and holds soft peaks.
Transfer a little less than half of egg whites to chocolate. Mix until egg whites are thoroughly incorporated into the chocolate for less than two minutes. Add the rest of the egg whites; gently fold into the chocolate with a spatula, lifting from the bottom and folding over. Stop mixing after the egg white disappears. Divide the mixture between 2 prepared ramekins. Place ramekins on a baking sheet.
Bake for twelve to fifteen minutes in a preheated oven until it is puffed and has risen above the top of the rim. If you want to add liquor to this, you can add it to the milk and flour mixture after you turn off the heat. Rum works beautifully, as does coffee, orange, or raspberry liquor. You can dust the souffles with a bit of cocoa powder just before serving.

Hummus recipe

Take 250 grams cooked chickpeas,
1/4 cup (60 ml) fresh lemon juice,
1/4 cup (60 ml) well-stirred tahini,
a small minced garlic clove,
two tablespoons (30 ml) extra-virgin olive oil, 1/2 teaspoon ground cumin and salt to taste. Add 30 to 45 ml of water and dash ground paprika for serving.
Directions:
In the bowl of a food processor, combine the tahini and lemon juice and process for a minute, scrape the sides, bottom of the bowl and then process for 30 seconds. This helps whip or cream the tahini, making the hummus smooth and creamy.
Add the olive oil, minced garlic, cumin, and a half teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended. Open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for a minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; for one to two minutes. Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil and a dash of paprika.
We can store homemade hummus in an airtight container and refrigerate upto one week.
Spinach and Feta Ravioli
For the filling:
A tablespoon of olive oil, 10 ounce of  fresh spinach, one cup feta cheese and half a cup of pine nuts.
To make the ravioli:
Two fresh pasta sheets, an egg and one tablespoon water.
Step 1
Heat the olive oil in a large skillet over medium-high heat. Cook the spinach for about two minutes until fully wilted. Let cool and then squeeze the spinach to remove as much liquid as you can. Combine the cooked spinach, feta, and pine nuts in a blender or a food processor and pulse until it is the consistency of a fine paste. Beat the egg and water together in a small bowl.
To assemble the ravioli, brush the egg over a sheet of pasta. Drop the filling mixture on the dough by teaspoonfuls about one inch apart. Cover the filling with the top sheet of pasta, pressing out the air from around each portion of filling. Press firmly around the filling in whatever shape you wish (circles, squares) and then cut them apart. Press the tines of a fork around the edges of the pasta to seal each raviolo.
Fill a large pot with lightly salted water and bring it to a rolling boil over high heat. While the water is boiling, add the ravioli, stir gently, and return to a boil. Cook it uncovered for about three to five minutes, until the ravioli floats to the top and the filling is hot.
Drizzle some white sauce or red sauce over the ravioli upon serving.
